Ingredients

  • 3 tablespoons tahini
  • Lemon juice
  • Grated garlic
  • Salt and pepper
  • Cold water for thinning

Method and one important tip

Mix tahini with lemon juice and garlic. Do not worry if the mixture first turns thick and stiff — that is tahini's natural reaction to acid. Now add cold water spoon by spoon and whisk; you will see the dressing suddenly loosen and reach a creamy, light texture. Adjust final thickness with water: thicker for dip, thinner for salad.

This dressing is not just for salad. Pour it over a quinoa bowl with grilled vegetables, serve beside grilled chicken, or set it out as a dip for raw vegetables. It keeps up to five days in a sealed container in the refrigerator; if it thickens after a few days, add a spoonful of water and stir to restore the original consistency.
