One of the most frequent questions our DevinJax support team receives is: why has a layer of oil collected on my sesame cream? Is it spoiled? The short answer: no, it is completely natural. Sesame and nuts are naturally about half oil by weight, and when a product has no industrial emulsifier, that oil gradually rises to the top. Just stir well before use and the texture returns to normal.

Storage temperature is the most important factor for quality. The ideal is below 25°C — a cabinet away from the stove and sunny windows. Direct sunlight and heat speed oil oxidation, which results in a bitter, stale taste. One less-mentioned tip: always use a dry, clean spoon; moisture or bread crumbs in the jar drastically shortens product life.
These products usually last 9 to 12 months before opening. After opening, if you follow the principles above, tahini and sesame cream keep their quality for several months. Know the real signs of spoilage so you do not throw away good product unnecessarily: sharp sour smell, unusually bitter taste, or mold mean spoilage; slight surface color change and oil separation do not.
