Hummus with Premium Tahini: A Persian-Lebanese Twist

Hummus without good tahini is not really hummus — tahini quality is the deciding factor.

Hummus looks like plain chickpea puree, but anyone who has eaten good hummus knows the difference between average and restaurant-quality: it is in the tahini. Tahini gives hummus its silky texture, depth of flavor, and that distinctive nutty finish. With low-quality or bitter tahini, even the best chickpeas in the world will not save you.

  • Premium tahini
  • Garlic
  • Lemon juice
  • Olive oil

The secret to silky texture

Blending order matters more than you might think. First blend tahini and lemon juice in a food processor until light and creamy — this is the step famous Lebanese hummus shops use. Then add garlic and chickpeas, and while processing, drizzle in cold water or chickpea cooking liquid spoon by spoon until the texture reaches your desired smoothness. Finally adjust seasoning with salt and cumin.

If you have time and patience, remove the skins from cooked chickpeas; it takes ten extra minutes but lifts the final texture to another level. To serve, spread hummus on a plate, create a well with the back of a spoon, drizzle olive oil, and garnish with paprika and parsley. With fresh sangak bread or raw vegetables, it works as mezze and as a complete light dinner.
